Summer Squash

   

A summer delight with a kick of spice.

Ingredients

1 pounds yellow squash
3.5 tsb Sunnyside Farms butter
1 large onion, chopped
1 garlic clove, chopped
1 red bell pepper, chopped
1 medium jalapeƱo pepper, seeded & chopped
8 oz Sunnyside Farms Cream Cheese, room temp.
2 large Sunnyside Farms eggs, beaten
1/4 cup Sunnyside Farms heavy whipping cream
1/2 tspn Sunny Select sugar
1/2 tspn Sunny Select salt
1/4 tspn cayenne pepper
2 slices Pacific Coast Selections Sourghdough bread, toasted
1 Doz Sunny Select Snackers Crackers, Crumbled

Preparation

Method:

1. Preheat oven to 350°. Coat 2 1/2-qt baking dish with butter. Slice squash to preference. Add to boiling, salted water until tender, approx 10 minutes. Drain.

2. Saute onion, garlic and peppers in 3 tbsp butter until tender.

3. Coat toasted bread chunks with remaining melted butter.

4. Mix squash, eggs, cream, sugar and seasonings and crackers. Blend well. Pour into the baking dish. Layer with cream cheese, bread crumbs and bake 40 minutes, until browned.
