Not your typical salmon sandwich, this blend of tropical and southern flavors will leave you wanting more!
Ingredients
1 pound Master Catch Salmon filet, skinned
2 teaspoons Cajun seasonings
1/3 cup Sunny Select Crushed Pineapple, drained
2 tablespoons Sunnyside Farms Plain Yogurt
4 slices EACH tomato AND red onion
4 lettuce leaves
4 whole wheat rolls, split and toasted
Preparation
Preheat grill to high. Rub salmon on both sides with seasoning. Lightly spray grill with non-stick spray. Grill until cooked through, 3 to 4 minutes per side. Divide into 4 pieces. In small bowl, mix pineapple and yogurt. Spread 1 to 2 tablespoons of pineapple mixture on roll; top with salmon, lettuce, tomato and onion. Serves 4.
